Abstract
Aroma-active compounds of Chinese quince (Pseudocydonia sinensis) and Korean mugwort (Artemisia
princeps orientalis) were extracted by high vacuum sublimation (HVS), direct-extraction
simultaneous distillation and extraction (Di-SDE) and Head-space solid phase microextraction
(SPME) methods and analyzed by gas chromatography-mass spectrometry (GC-MS)-olfactometry (GC-O).
In Chinese quince extracted by HVS, gas chromatography-mass spectrometry using two types of
capillary column with different polarities (DB-5MS and DB-WAX) revealed that terpene compounds
were found the most predominant compound of total volatile compounds, especially (E,E)-afarnesene
is the most abundant compound in both peel (49.91%) and flesh (29.14%) repectively.
Using SPME, over 79% of compounds were ester compounds in the peel such as isobutyl octanoate
(16.60%), ethyl acetate (10.62%) and so on. In the Chinese quince flesh, over 88% of compounds
were ester compounds such as hexyl isobutyrate (35.31%), hexyl-2-methyl butyrate (15.30%) and so
on. In Korean mugwort, GC-MS revealed that terpene compounds were found to account for about 45%
and 56% of total volatile compounds extracted by Di-SDE and SPME respectively. Sequiterpenes
were contained large percentage in these Korean mugwort both Di-SDE and SPME extracts,
especially b-caryophyllene were predominant compounds. Aroma extract dilution analysis (AEDA)
using two types of capillary column with different polarities (DB-5MS and DB-WAX) revealed
thatg-decalacton, b-ionone, ethyl (E)-2-butenoate, ethyl isobutyrate were one of the
most important aroma-active compounds of Chinese quince peel aroma. In Chinese quince flesh,
hexanal, (Z)-3-hexenal, (Z)-3-hexenol were found to show typical green aromas. 1,8-cineol, known
to typical aroma of genus Artemisia, were also found to show as important aroma active compound
of Korean mugwort. (Z)-3-hexenal, g-terpinene and (E,Z)-2,6-nonadienal were contribute to green
aroma of Korean mugwort.
