dc.description.abstractIn spite of unknown cognitive mechanism of the judgment of sensory response, sensory evaluation
based on panel test is widely used all over the world. Many works on sensory evaluation
methodology faced non reproducible results due to individual variance in food life. To resolve
these problems, cognitive sensory evaluation using cognitive sensory barcode and frequency curve,
were developed and tested. Questionnaire consisted of subjective and objective parameters
include 158 items was designed and tested with 3 groups consisted of 148 individuals of
different university using potato flake. From the answered data, cognitive sensory barcode and
frequency curve were obtained using new method developed through this study. Clustering analysis
showed the consistent trend of grouping into eight subgroups based on their sensory patterns and
consciousness characteristics. To investigate role of consciousness, single consciousness layer
and its combinations with other layers, were tested on the effect of clustering phenomena, and
showed that 7TH and 8TH consciousness layers played major role. Correlation analysis between
sensory and consciousness elements indicated that consciousness elements were important factor
associated to the food preference of individual and group of individuals. The major significant
consciousness elements affect total preference were education level of family, eating frequency,
direction of association, preference of family and willingness. Particularly, direction of
association (PCC=0.50678) and preference of family (PCC=0.69938) showed higher association with
total preference.
Correlation result that elements of preference not belonged to same part of five senses affected
other elements belonged to other part, indicated that the preference responses associated with
five senses are not independent with others.
These results are positive evidences of proving cognitive sensory theory based on multi-layer
consciousness.
